Super Easy Tofu Scramble Recipe

Hello all! It’s the new year and after a recent trip home (the Charleston SC area) I’ve decided to jump on the Vegan train. I have always assumed that after being vegetarian for a while the next step would naturally be… vegan. BUT it was what my brother, Tre’ said during my visit that pushed me over the edge.

Me: Tre’, would you like an egg sandwich?
Tre’: No I don’t eat eggs
PAUSE…
Tre’: I don’t want any aborted chickens!

…and this guy isn’t even vegetarian!?

Now I’ve thought about this before and somehow found myself eating eggs again. It was a love hate relationships. But now my egg relationship is all love. I won’t abort anymore baby chicks!

UPDATE: Eggs are actually UN-fertilized chicken eggs … So thankfully I wasn’t eating aborted baby chicks. I was eating the chickens period…menstrual cycle! Yay! HURL!!!!

Anyway, I’m over consuming animal secretions and things made from animal secretions….cheese…butter…milk etc. And today I jumped right in to see if I could successfully replace my occasional morning eggs… and I must say it was an success.

I kept this tofu scramble very simple because I wanted to see if it truly tasted good…on its on without all the fancies.

Ingredients:
Sliced Mushrooms
Sliced Red Onions
Chopped Asparagus
Extra Firm Tofu: pressed (I used my Tofu Press) and crumbled
Salt and Pepper to taste

Instructions:
Saute the veggies in your choice of oil until tender.
Add crumbled tofu to pan with veggies stir until warm
season and EAT!

There’s FISH in my Milk!

So here I am trying my very best to make good decisions for my Vegetarian family. Buying healthy and of course vegetarian food.

You have no idea how shocked and disgusted we were to find out (after drinking two half gallons) that I Organic, Animal Welfare Certified cows milk had FISH in it. Technically fish oil, but fish were still killed and pressed for their oils.milk ingredients

 

Typically I buy non-dairy milk but this ONE time while at Costco I decided to buy cows milk because:

1. The soy milk had Carrageenan

2. The cows milk said Animal Welfare Certified.  I felt like the cows were at least treated better than typical dairy cows.Animal Welfare Certified Milk

Isn’t it ironic how they “value”  treatment of cows enough to claim they care about there welfare… yet they kill fish and squeeze them for oil to add to this milk??

I never thought that milk could NOT be vegetarian. I am constantly reading labels to make sure there are no unnecessary additives but who knew that fish would be one of those additives. CRAZY!

With that said, always always read labels and never assume  {ASS-U-ME} 😉 that something meets your dietary standards no matter what they are!

I think I may just make Almond milk at home from now on!

2 Ingredient Home-Made Almond Milk!

I did it! I made Almond Milk, at home all by myself. Actually Ari was my sous chef. It was so stinking easy that it really isn’t much of an accomplishment.

Last week I attended a workshop on Power Foods for Kids and we learned to make many yummy recipes, I’ll share some of the other recipes with you all another time; the Avocado Chocolate Pudding Was AMAZING!

Some brands of store bought Almond milk have a pretty lengthy list of ingredients — many of us prefer shorter ingredient lists these days, and for good reason. You will have the peace of mind knowing exactly what is in your homemade Almond milk. Home-made Almond Milk is not only healthier it’s more affordable and easily customized!

Homemade Almond milk

What You Will Need

Equipment

  1. Mesh Sifter or Cheesecloth
  2. Measuring Cup
  3. Bowl
  4. Blender
  5. Container for storing the milk

Ingredients

  1. Raw Almonds/Cashews/Hazelnuts (Really any nut you’d like you can even mix nuts)
  2. Water
  3. Flavoring (Vanilla etc.) optional
  4. Sweetener (Honey, Dates, Maple Syrup etc.) optional

As Easy As One . . . Two . . . Three . . .

  1. Add 1 cup of Almonds to blender
  2. Add 4 cups of Water

  1. Blend Blend Blend… As you can see I don’t have a fancy blender either. It’s a Hamilton Beach Blender  and it was under $33. Thank you Amazon!

  1. Pour mixed through mesh strainer or cheese cloth.

  1. Refrigerate, and you are DONE!

Good To Know

I did NOT soak the almonds. During the workshop we were told that soaking would make it easier to blend. But after doing my own research there are other reasons to soak to make the nuts healthier. Knowledge can be a pain in my behind. For now I think I’m doing pretty well by making my own milk to start with. One step at a time. Maybe one day I’ll soak them. If you want to soak the recommended time is 12 hrs…so over night. Your Milk Should last 5 days in the fridge!

EASY Pumpkin Spice Latte!

It’s fall. You can’t deny it. All the ladies have pulled out their boots and scarves and Trader Joe’s has EVERYTHING available in pumpkin flavor!

It’s a lovely Saturday morning here in Atlanta and I was feeling creative. So I created this lovely little latte for the Hubby and myself. This was spur of the moment so I don’t have many pictures. I only have the picture I took for my food logging app TwoGrand which is awesome by the way!!

Vegan Pumpkin Latte

Serves 2

  • 1 cup Vanilla Almond Milk (Unsweetened) You can use any milk you like.
  • 2 Cups Organic Pumpkin Spice Coffee (I didn’t make it any stronger than normal, but you can)
  • 1 TBS Maple Syrup Grade B. It’s loaded with antioxidants! You could also use honey. agave, sugar etc.
  • 1 Tbs Organic Coconut Oil because it’s yummy and good for you! One of my favorite benefits is increased fat burning! You can add more!

The Process

  1. Make your coffee as you normally would.  For me that’s one scoop of coffee per 6 oz of cold filtered water.
  2. Warm milk. On stove or in microwave. I used a small sauce pan.
  3. Add Maple Syrup, to warmed milk
  4. Put coffee and milk mixture into blender
  5. Add coconut oil to blender. I like to use the blender because of the fabulous froth!
  6. BLEND! Pour into your favorite mug and ENJOY! Take caution when you blend it will be HOT!

Suggestions & Tips

I am sure that you could make this iced, you can also used any flavor coffee you have on hand OR add pumpkin spice seasoning to your plain coffee!

Grab a cozy blanket and curl up in your favorite chair and enjoy!
